Hi, I'm Giselle.
My work—in the kitchen and out—is inspired by the ingredients, culture, and people that make great meals. My table is a celebration of landscape, culture, and identity in the many dishes and flavors of my embodied experience and those I have come to love. My cooking is the marriage of my Lebanese heritage with the seasonal bounty of my environment and often inspired by my long-standing love affair with Latin America and its food. Every meal by my hand is a family meal. I care deeply about biodiversity and it shows in my garden. I love tomatoes.
I co-authored The Ark of Taste: Delicious and Distinctive Foods that Define the United States, published in August 2023 by Voracious Books. I have worked as a video producer, photographer, writer, event coordinator, marketing professional, baker, cook, and pop-up restaurant manager—sometimes all at once. Creating and hosting a great meal experience is my favorite thing. I spent a decade working as a documentary videographer specializing in food and agriculture before earning a Master's degree in Gastronomy from Boston University in 2018. I was named James Beard National Scholar Northwest for my field and thesis work in Argentina. I worked with Slow Food USA as the director of communications in the few years that followed. My clients include Slow Food USA, Neutral Foods, League of Kitchens, Ecotrust, Textile Exchange, ediblePortland, Smithsonian Student Adventures, the Good Meat Project (formerly Portland Meat Collective).
Musings
I was born and raised in Los Angeles. I'm half Lebanese and I think about Beirut constantly. I have a long-standing love affair with Argentina. I’ve unpacked my bags in Oregon for the last decade, where I live with my man and our pets.
I'd do almost anything for a plate of fresh Peruvian ceviche. Tomatoes are my favorite fruit. I've been dancing since I was 8. I have nostalgic feelings about Snoop Dogg. I really, truly love the feeling of sea salt in my hair. I'll order anything on a menu with goat cheese.
